TGIF..πŸ˜ƒ

I couldn’t wait to wake up this morning.Β  I knew if I made it through my monster “to-do-list” yesterday I’d be on easy street today. All I can say is THANK GOD for Fridays and Italian food!

We had friends over for a Mexican dinner about two weeks ago and while it was fun and yummy- it nearly broke my back. The problem with Mexican food is that too much needs to be done at the last minute; the rice, the bar-b-qued chicken and beef, frying the onions and peppers, heating the tortillas, the beans, the  corn.. . 😨When I finally had it all laid out and ready to serve, I had Thanksgiving-level fatigue.

Italian is soo much easier simply because it can be done ahead of time. I made a vegetarian lasagna (with roasted red peppers) and my famous baked spaghetti.Β  Both are snugly wrapped in the fridge and ready for 350*.Β  My salad components are all chopped and zip-locked, garlic bread is in foil, waiting to be tossed into the oven..brownies are cut, plated and already dusted with confectioner’s sugar. My only hiccup in all that prep was the Tiramisu.

It’s the same conundrum I face every time I make the stuff; do I use raw eggs?

When it’s just familia I throw caution to the wind and crack those suckers right in. No one has ever gotten salmonella or even a stomach ache… that I’m aware of…Β Β πŸ€”Β but it’s different when it’s not ‘your own people’ who will always forgive you.Β  I don’t want the talk at my husband’s place of employment to be the “GO FUND ME” page set up to pay the hospital bills for those I poisoned with my raw egg dessert.

SOOO, there I stood stirring my egg yolks over a double boiler until they reached the requisite 160 degrees- adding a whole ‘nuther step to an already multi-faceted recipe. I was bored, tired and my feet hurt..so I ate a lady finger or two..or more..only to discover later as I was assembling the thing in the pan that I was about 4 fingers short..oh well. πŸ™„

Anyway, I cleaned up my mega mess (!!) did a little house tidying, set the tables and pulled my sorry body upstairs at about 9:30pm. I don’t think my bed EVER felt so good; it cocooned me like a shell does a pearl.

This folding table (that can handle up to 8) has enabled me to comfortably seat twice as many people as I could before.

Today I’m getting my hair and nails done..and that’s it. I plan on basking in the reward of yesterday’s culinary olympics and fully intend on playing the part of a guest at my own dinner.

Like I said, thank GOD for Fridays.. AND THANK GOD for Italian food!

    • Thanks Kim..Just got back from nails..got my hair done..having a relaxing day thanks to yesterday. I think I’m making Italian from here on out- forever and ever. See you Monday!!! πŸ˜ƒ
