The best, soft scrambled eggs ever!

* Mix, don’t whip, eggs with a whisk in a bowl. (You don’t want too much air, or they’ll be dry.)

* Pour eggs into a cold or slightly warmed pan coated in cooking oil. (If the pan is too hot, they’ll cook too fast)

*Stir almost constantly over med-low heat.

*Remove while still slightly runny as they will continue to cook.
