This sweet treat is a family favorite.
I have the recipe in my folder, torn from an October 1996 Southern Living Magazine.
2 1/3 cups all purpose flour
1 tsp baking soda
1 cup coke (Diet soda will not do)
2/3 cup butter or margarine
2 TBSP unsweetened cocoa powder
2 eggs slightly beaten
1/2 cup buttermilk
2 tsp vanilla
1 1/2 cups tiny marshmallows
- 1/2 cup butter
- 1/4 cup cocoa powder
- 1/4 cup coke (no diet)
- 2 1/2 cups powdered sugar
- 1 tsp vanilla
- 1 cup chopped walnuts
In a large mixing bowl, stir together flour, sugar and baking soda- set aside.
In medium saucepan bring cola, butter and coca powder to a boil over medium heat.
Slowly add hot mixture to the flour mixture, stir just until combined.
Add eggs, buttermilk and vanilla, stir until combined.
Gently stir in marshmallows.
Pour into grease and floured 13X9X2 baking pan.
Bake at 350 degrees, 30 mins, until wooden toothpick comes out clean.
Immediately pour and spread topping on top of hot cake.
Cool completely, store in fridge for easier cutting.
In medium saucepan bring 1/2 cup butter, 1/4 cup unsweetened coca powder, and 1/4 cup cola to boil.
Add 2 1/2 cup sifted powdered sugar and 1 tsp vanilla. Mix with a whisk until combined.
Stir in 1 cup chopped walnuts if desired.
