This is a wonderful, healthy stand-in for a regular meat hamburger. Don’t be shy.. shake on all your favorite spices!
- small Zucchini
- sliced cheese
- salt, pepper
- garlic powder and/or your favorite spices
Clean off the zucchini and peel about 50% of the skin away. Slice the zucchini lengthwise into thick pieces. I usually get about three from each one. Generously salt each side and allow them to “sweat” for about an hour.
Scoop the avocado into a bowl and add whatever spices you like. Mash up with a fork. This will be a stand-in for mayonnaise. (Or you can use mayo!)
Heat light olive oil in a pan on almost high heat.
Dab the zucchini dry and shake spices on each side. (don’t hold back on your spices, remember, zucchini tastes like nothing..so adding flavors is important.)
Add the zucchini to the pan and brown each side. The idea is to keep them pretty firm -NOT SOFT OR MUSHY!
Spread the avocado (or mayo) on toasted buns, add your regular burger toppings!
I haven’t had a real meat burger in years..I tried all the fake burgers out there, but they just didn’t cut it for me. (Maybe they were trying too hard to be burgers?) If you can’t go with the zucchini, slice a chicken breast in half lengthwise instead. Season as desired and grill or sear until cooked through. It’s not as low-cal as zucchini, but it’s still better for you than beef.
