“PAM”CAKES

Delicious and so light!

Don’t overmix the batter..or the pancakes will be tough.

 

  • 1 & 3/4 cup flourCroppedImage830506-pancakes
  • 2 tsp sugar
  • 1&1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 cups buttermilk. (I use 1 cup regular, 1 cup buttermilk.)
  • 2 large eggs
  • 1/4 cup melted butter

 

Combine flour and next 4 ingredients.

Separately whisk together eggs and milk.

Gradually add to flour mix.

Gently stir in butter. (Batter will be lumpy.)

Cook on a non stick, greased griddle- only turn once when tops are covered with bubbles.
